In summer when fresh tomatoes are at their best there is no salad that is better than this one. I could eat it every day and as well as being delicious, it is pretty with the vibrant colors of the tomatoes and the basil.
FRESH MOZZARELLA TOMATO SALAD
2 medium tomatoes
6 ounces fresh mozzarella cheese
3 tablespoons olive oil
4 teaspoons minced fresh basil
Salt and pepper to taste
Slice tomatoes and mozzarella cheese. Arrange on a platter. Drizzle with olive oil and sprinkle with minced basil and salt and pepper.
Serve at room temperature.
