Strawberry – easy enough for me pie

I found this recipe when I was looking through a cookbook put out by volunteers at the St. George Tucker House in Colonial Williamsburg. The title of this recipe intrigued me and since I like all the ingredients I made it last week. It is incredibly easy to make and I thought it was very tasty and I did not have particularly good strawberries. It occurred to me that this recipe would be perfect for a Mother’s Day column. Children can make this pie with Dad’s help and older children should be able to make it with little or no assistance.
I think I may try this recipe with peaches this summer.

STRAWBERRY – EASY ENOUGH
FOR ME PIE
1 6-oz. graham cracker pie crust
1 8-oz. package of cream cheese, softened
1/4 cup granulated sugar
1/2 teaspoon pure vanilla extract
Dash of nutmeg
1 generous cup strawberry slices
1 cup whipping cream
1/4 cup sifted confectioners sugar

Combine softened cream cheese, granulated sugar, vanilla extract and nutmeg, mixing well until blended. (I used a hand mixer for this.)
Crush 3/4 cup strawberry slices; stir into the cream cheese mixture.
Whip cream with confectioners sugar until peaks form. Fold into the cream cheese mixture.
Fold remaining strawberry slices into the cream cheese mixture. Spoon into the pie crust.
Chill for several hours or overnight. Garnish with additional strawberries before serving if desired.
