I tried this recipe recently and thought it was delicious and was also easy to prepare. I was able to find the thick-cut pork chops in the counter at a local grocery store and I had everything else on hand, but you do need a thicker-cut chop for this.
I think this should be served with mashed potatoes or rice.

SAUCY BAKED PORK CHOPS
2 tablespoons butter
2 bone-in pork loin chops (3/4-inch thick)
1/4 cup chopped onion
1/4 cup pure maple syrup
2 tablespoons water
1 tablespoon cider vinegar
2 teaspoons Worcestershire sauce
1 teaspoon chili powder
1/4 teaspoon each salt and pepper
1/8 teaspoon garlic powder

Preheat oven to 350 degrees.
In a large skillet, heat butter over medium heat. Brown pork chops on both sides, then transfer to a greased 11×7-inch baking dish; sprinkle with the chopped onion.
In a bowl, mix the remaining ingredients; pour cover the chops. Bake, covered, until a thermometer reads 145 degrees, 15-20 minutes.
Let stand for 5 minutes before serving.
