Mincemeat salad

I made this congealed Mincemeat Salad several weeks ago and served it to the people working on chicken pies. I thought the salad was delicious and was not overly sweet like so many of these salads tend to be. If  you decide to make this don’t skip the sour cream. It really compliments the salad.
I liked this salad so much that I am going to be sure to buy a couple of extra jars of mincemeat while they are available during the holiday season.
I think the salad would be a nice addition to your Thanksgiving meal.

 MINCEMEAT SALAD
2 small packages lemon Jell-O
1 1/2 cups hot water
2 cups orange juice
2 cups mincemeat
1/2 cup chopped nuts
Sour cream to spread over the Jell-O when you serve it

Dissolve Jell-O in hot water. Add orange juice and chill until slightly thickened. Stir in the mincemeat and nuts. Pour into pan and chill thoroughly until set — overnight is best. Serve salad “iced” with sour cream.
