Green beans with lemon-mustard sauce

I bought some beautiful green beans at the Farmers Market last week and tried this recipe. The beans were wonderful. Although I was cooking for one I went ahead and cooked all the beans and then heated just what I needed for one serving. I then reduced the amount of sauce I prepared – if I want to serve the beans the same way for the next meal the sauce is really easy to assemble but by doing it this way it gives me options for difference dishes.

GREEN BEANS with
LEMON-MUSTARD SAUCE
1 pound green beans
4 tablespoons butter
1 tablespoon mustard
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons or more chopped fresh parsley

Cook beans in a small amount of boiling salted water until just crisp tender. Drain and shock in cold water to stop cooking process. (May do in advance and just reheat in microwave before adding sauce and serving.)
Melt butter in saucepan. Add lemon juice, mustard, salt and pepper. Simmer until just smooth and blended. Pour over beans and sprinkle with chopped parsley.
